In 2017, I made Engagement Roast Chicken for my then-boyfriend, Gavin, in hopes that he’d propose to me. The crispy-skinned, lemon-stuffed bird worked its magic (or it was the fact that I told him I wanted to tie the knot after we devoured the meal) because we got engaged a few months later and married in late 2018.

What Is Marry Me Chicken Soup?
Marry Me Chicken Soup is a brothy variation of Marry Me Chicken, chicken breast (or whatever cut you like best) swathed in a decadent cream sauce made with Parmesan and sun-dried tomato and served with diced bacon and angel hair pasta. Marry Me Chicken Soup has similar flavors and is just as easy to make, but swaps the original’s chicken breasts, angel hair, and bacon for store-bought rotisserie chicken, cream cheese, shell pasta, basil, and other ingredients.
Why We Love Marry Me Chicken Soup
Besides the cheeky name and conversation it inspires, we adore Marry Me Chicken Soup because the comforting one-pot meal comes together in about an hour. The stew brims with complex sweet and tangy notes, thanks in part to the addition of sun-dried tomato slices and oil from the jar they come in and tomato paste.
Chopped onion, fresh basil, garlic two ways (minced and powdered), and dried Italian seasoning work together to build tons of flavor, and a combination of heavy cream, cream cheese, and shredded Parm give the soup a velvety texture and gently salty bite. Marry Me Chicken Soup Tips and Variations
Freeze it: You can freeze the soup as-is, but because it contains cream cheese and heavy cream, it might become a grainy texture and separate during the defrosting process. Instead, if you plan to freeze the soup, hold off on stirring in the heavy cream and cream cheese until you’re reheating it.
Up the spice level: Throw in a diced jalapeño or serrano pepper or a few dashes of your favorite hot sauce.
Mix up the garnishes: Sprinkle crispy chopped bacon, diced tomatoes, or even crumbled potato chips on top of the soup to add more layers of texture.
