Filipino cuisine is the next big food trend, apparently

Forget cloud eggs and purple ice cream – apparently the next big food trend of 2017 will be something more… meaty.

According to top chef Anthony Bourdain, anyway, who reckons that “underrated” Filipino cuisine will be the next thing on hipster menus.

Namely a dish called pork sisg which – as you can probably guess from the name – isn’t for anyone considering going veggie soon, and is a crispy pork dish made from liver and pig’s head.

“I think certain Filipino dishes are more likely to take root and take hold more quickly than others,” Bourdain told CNN.

“I think sisg is perfectly positioned to win the hearts and minds of the world as a whole.”

He described sisg as “casual, accessible, [and] exactly what you need after a few beers,” and the one that’s going to “hook” people who’ve never tried the country’s dishes.

He also predicts that the Filipino cuisine as a whole will explode – a little like Korean food has in the past decade.

So if you’d rather ditch the vegan trend for something more meaty, keep an eye out for Filipino restaurants popping up soon.
