These three Christmas party snack ideas are so easy
Making homemade crostini is a super easy way to ensure you've always got party snacks on hand during the festive season.
You can make a batch and keep them in an airtight container for a few days until you need them, or serve them right away with one of our fabulous Christmassy toppings...
Crostini base recipe
12 x 1-2cm thick slices of baguette
2 tbsp olive oil
Flaky sea salt
Preheat the oven to 200°C (180°C fan) gas mark 6.
Line a baking tray with baking parchment, spread out your baguette slices, drizzle over the olive oil and sprinkle over the salt. Bake for 10-15 minutes until golden.
Ricotta with brown butter pine nuts and crispy sage
12 sage leaves
2 tbsp olive oil
3 tbsp pine nuts
3 tbsp salted butter
Ricotta
Set a frying pan over a low-medium heat. Add the butter, then melt and heat until it turns brown and smells nutty. Add the pine nuts, toast for 2 minutes, then remove the pan from the heat.
Decant the buttery pine nuts into a small bowl and set aside. Wipe out the pan with kitchen towel, then place back on the hob over a medium heat. Add the olive oil, then, once hot, add the sage leaves. Fry for 2-5 minutes until crisp, then remove carefully with a fork to drain on kitchen towel.
Spread the ricotta on 12 crostini bases, top with the brown butter pine nuts and garnish with the crispy sage.
Brie and roasted grapes
115g brie, sliced into 12 chunks
250g red seedless grapes
1 tbsp olive oil
2 tsp fresh thyme leaves
Preheat the oven to 200°C (180°C fan) gas mark 6.
Line a small baking tray with baking parchment, add the grapes and drizzle with olive oil. Roast for 25-30 minutes until the grapes are wrinkled and caramelised.
Preheat the grill to high.
Place a chunk of brie on each crostini and then cook under the grill for 2-5 minutes until the cheese bubbles.
Top with the roasted grapes and fresh thyme leaves.
Radish, salted butter and parsley
12 radishes, thinly sliced with a mandolin slicer
6 tbsp salted butter
Small bunch of flat leaf parsley
Spread the butter equally between the 12 crostini.
Top with the sliced radishes, digging the edges slightly in to the butter to keep them stable.
Garnish with picked leaves from the flat leaf parsley.
