What Is Your “Struggle Meal” That You Make Even When You’re Not Struggling Because It’s That Good?

A simple fact of human life is that we need to feed ourselves. Sometimes, under a tight budget and/or empty pantry, that's just hard to do fruitfully. Fortunately, necessity is the mother of innovation and I know I've made some pretty impressive meals with a spark of creativity and collection of random ingredients.
