Slow cooker French onion soup recipe for when you're feeling 'lazy'

Soup season is officially in full swing. You can't go wrong with a steaming bowl of soup, warming your cockles from the inside out.

But if you don’t have the time to slave over the hob, food content creator and cookbook author Nathan Anthony, commonly known as Bored of Lunch, has shared a no fuss, no frills soup recipe which can be left alone for hours. In a recent TikTok video, Nathan showed off a French onion soup recipe which can be done entirely in a slow cooker.

He captioned the video: “What’s better than a rich brothy soup with crusty cheesy bread on top? This is the laziest version possible so I apologise to the French nation.”

A bonus of Nathan’s recipe is that the entire thing can be left all day to cook, so if you’re heading out to work, it’ll be done by the time you return home.

His recipe went down a treat with fellow foodies, with his TikTok racking up over 790,500 views already. Cara commented: “I need to try this.”

Sarah wrote: “This looks so tasty I could just eat this right now.”

Darryl said, “Absolutely beautiful soup... heartwarming,” while Jamie replied, “This is the most magnificent meal. I'm dying to make it. Thank you for sharing..”

Some even shared hacks to make the prep even easier. Shane commented: “I seen a tip where someone used a potato peeler to cut onions. use a fork to hold the onion and slice top to bottom.”

So if you’re feeling lazy and are in need of a simple soup this autumn, here is what you’ll need for Nathan’s recipe.

Slow Cooker French Onion Soup

Ingredients

  • 10-15 onions, sliced (roughly 1.5kg)

  • 100g butter

  • One tsp Italian herbs

  • Fresh thyme

  • 900ml beef stock

  • 200ml white wine

  • One bay leaf

  • Salt

  • Pepper

  • Two-three garlic cloves

  • Two tbsp brown sugar

  • One tbsp Worcestershire sauce

  • Two handfuls of cheese

  • Six bread slices

Method

Slice all the onions up and add them to the slow cooker. Add all ingredients to the slow cooker except the stock, cheese and bread.

Cook on high for between eight to ten hours on high. Nathan advised that if you want to speed up the process, you can pre-soften the onion in a frying pan before adding it to the slow cooker.

Once cooked, remove the herbs and add in the beef stock, before topping with the sliced bread and cheese. Make sure to butter the bread.

Place under the grill for eight minutes. Once the bread has toasted and the cheese has melted, remove from under the grill.

Serve and enjoy!
