Mum-of-two shares how she makes budget-friendly meals for kids for less than £1 per serving
A savvy mum has revealed how she manages to make budget friendly, delicious meals which the whole family will enjoy - and they only cost £1 per serving.
Thinking about what we are going to have for dinner takes up a lot of daily thought. From getting the ingredients in the supermarket, to cooking times, plus keeping meals varied and interesting, all way staying in budget.
In the current financial climate with the rising cost of living crisis, it can be hard to find good, healthy meals which won't see you forking out a small fortune. One mum has shared four of her favourite meals, packed with flavour, that the whole family will enjoy.
Grace Mortimer, is a Sunday Times bestselling author and online recipe creator. She loves sharing simple, yet fun combinations that parents can prepare for their children, using affordable ingredients. Recently, she spent £18.78 at her local Aldi, and managed to turn it into 20 meals.

The content creator, who boasts 638,000 followers on her Instagram account @_myfirstmeals, said: "I'm so excited to bring you five, delicious, budget-friendly meals for less than £5 to help you keep a handle on the purse strings. All meals come to £1 per serving."
She says you can make a cream, broccoli soup with parmesan croutons, in total this dish costs £3.47 and 87p per. It can work well for lunchtimes, as a main meal, or to be popped in the fridge and warmed up for a snack.
Grace also suggests making pizza loaded jacket potatoes with salad - including peppers, ham, and mozzarella on top of jacket potatoes. The best part is that is doesn't take long in the oven and costs just £1.01 per serving, or £4.02 for a family-of-four.
She has also prepared roasted cauliflower curry for her family, with her Aldi shop, priced at £3.84 for four people, as well as fishfinger sarnies with chips and salad for 97p per serving.
Her favourite, which is easy to prepare, is a three vegetable pasta bake. Grace said it cost her 89p per person for all the ingredients. She picked up one tin of chopped tomatoes, one tin of sliced carrots drained, one jar of grilled peppers in oil, 500g penne and one ball of mozzarella.
Grace shared how to prepare this treat. Method:
Turn the oven to 200C fan
Boil the pasta according to packet instructions then drain and set aside
In a food processor or blender, add the chopped tomatoes, sliced carrots and the grilled peppers including the oil
Blitz until creamy and smooth, season if you wish
Combine the cooked pasta and sauce in an ovenproof dish and mix thoroughly
Top with roughly torn chunks of mozzarella and bake for 20 minutes until the cheese has melted and the sauce is bubbling.
