Mexican-style baked beans on toast

Spiced-up baked beans with crispy chorizo and avocado makes a filling and flavour-packed brunch.

Ingredients

  • 1 x 400g tin baked beans

  • 1 tsp fajita seasoning or smoked paprika

  • 6 chorizo slices, about 1mm thick

  • 4 thick slices of white bread

  • Butter, for spreading

  • 1 small avocado, flesh peeled and sliced

  • A few coriander leaves, to garnish

  • Soured cream (optional)

Method

  1. Preheat the grill.

  2. Gently warm the baked beans and seasoning together in a saucepan without boiling.

  3. Meanwhile, place the chorizo slices on a small baking sheet. Place the chorizo and the bread under the grill and cook for 2 minutes or so on each side, until the chorizo is crispy and the bread is golden.

  4. Butter the warm toast and divide between two plates.

  5. Spoon over the spiced beans and top with avocado slices.

  6. Tear over the crispy chorizo and scatter with coriander leaves.

  7. Add a little spoonful of soured cream, if you like.
