Forget kale, cauliflower is the new vegetable obsession for healthy eaters
For years, kale has been the go-to vegetable for healthy eaters – touted as a clean-eating powerhouse by bloggers, chefs and dieters.
But could it be displaced by a new vegetable on the block – the humble cauliflower?
Kale might be rich in vitamins, and filling – but it’s nowhere near as versatile as cauliflower, which is booming as a way to tempt meat-eaters to eat veg as a main course.

Whole Foods has seen double-digit growth in cauliflower sales for two years running, Bloomberg reports – thanks to products such as mashed cauliflower, cauliflower ‘rice’ and a cauliflower and sweet potato medley.
‘It’s similar to what we saw with kale a few years ago,’ says Erik Brown of Whole Foods, in an interview with Bloomberg.

Chefs have used cauliflowers in recipes built to tempt meat eaters – with cauliflowers fried and topped with blue cheese sauce, for example, as if it was a steak.
Lifestyle bloggers have also been touting the health benefits of cauliflower – with Livestrong pointing out that a cup of cauliflower contains nearly as much Vitamin C as an orange.
Whole Foods says that cauliflower is rich in choline, dietary fiber, omega-3 fatty acids, manganese, phosphorus, potassium, vitamin B1, B2, and B3, as well as protein.
