1. Passover matzah icebox cake

This cake may look fancy, but it’s actually super easy to make. Start by placing matzah on a baking sheet lined with parchment paper. Next, pour melted chocolate over the matzah and spread it evenly. Once the chocolate hardens, spread a layer of matcha whipped cream on the other side of the matzah. Stack each piece of matzah in a loaf pan lined with parchment paper. Cover the matzah layers with the matcha whipped cream. Then freeze for six hours before serving.

2. Passover coconut macaroons

Guests will go “coco-nuts” for these coconut macaroons. First, beat together egg whites, salt, vanilla extract and honey until the substance becomes foamy. Next, fold in coconut shavings. Then use an ice cream scooper to transfer the batter to a baking sheet lined with parchment paper. Pop them in the oven at 350 degrees Fahrenheit for 15 minutes. After baking, dip each cookie in melted chocolate before serving.

3. Passover chocolate raspberry cups

If you enjoy chocolate and berries, this recipe is definitely your jam. Begin by melting dark chocolate, and combine with coconut oil. Next, use a spoon to transfer the chocolate into cupcake liners. Then, add a raspberry filling made from frozen raspberries, maple syrup, coconut cream and coconut oil. Cover the filling with more chocolate, and top with dried raspberries before freezing.

4. Passover strawberry mousse

This deliciously creamy mousse features an infusion of strawberries. First, add egg whites, sliced strawberries, lemon juice and cane sugar to an electric mixer. Next, beat the ingredients on high for about 10 to 15 minutes, increasing the mixer’s speed throughout. The mousse should become more whipped and fluffy. Finally, transfer the mousse to a container, and freeze until it’s ready to serve.

5. Passover chocolate berry parfaits

These perfect chocolate berry parfaits are ripe for the taking. This recipe involves adding a layer of chocolate pudding to a glass followed by strawberries, blueberries and whipped cream. Top the whipped cream with Passover-friendly brownie bits and raspberries. Then add another layer of chocolate pudding, mixed berries and whipped cream. Top off the pudding parfait with berries, Passover-friendly brownie chunks and a drizzle of honey.
