10 Easter brunch recipes that are sure to impress

I’m not gonna lie but come the weekend, and especially on long weekends, I tend to get a little “brunch obsessed.” I have no idea why but I think it may be because my usual weekday breakfast fare is so darn boring.

So when I have more time during the weekends, I like to let loose and indulge in a decadent brunch. Here are some of my favourite brunch recipes that aren’t just pretty to look at but are also super easy to make. Some are even transportable so if you’re having an Easter brunch get together this weekend, these dishes are sure to impress.

You can prepare this the night before so it eliminates the rush to put the whole shebang together before your guests arrive for brunch. I have to admit, I took this to a brunch last summer and I almost ate the whole thing myself. It’s that delish!

Puff pastry is an easy and versatile go-to ingredient in a lot of my recipes but don’t for a second believe that I make my own. It’s too much of a pain to fold and then fold and then fold it again. Who has time for this? Store bought is the way to go and with this recipe it’s a sure fire hit for brunch. I made mine with zucchini and feta cheese but you can certainly use other toppings to make this your signature brunch dish.

This no-cook recipe is perfect if you’re looking for something quick and easy yet delivers that “wow” factor. Every ingredient in this recipe can be store-bought or substituted for similar ingredients that you may have in your fridge. That’s why I call this the “everything I have in the fridge” focaccia bread. Toasted focaccia pieces are smeared with olive oil and topped with creamy goat cheese and fresh spring greens.

There’s something about panko crumbs. It doesn’t matter what you coat in them, everything just tastes a whole lot crunchier and better. I took some leftover focaccia bread, sliced it up, dipped it in the standard egg mixture and coated it in panko and this was the result. Crisp golden brown french toast drizzled with maple syrup and topped with cranberry and pepitas. A perfect brunch dish for two, or in my case one because it was too good to share.

Do you know what a Dutch baby is? Nope it’s not a kid who was born in Holland. A Dutch baby pancake, sometimes called a German pancake or a Dutch puff, is a sweet popover that is normally served for breakfast. Mine usually comes out looking all puffy and beautiful, but leave it unattended for a few minutes and it will deflate. Either way, it’s still a delicious brunch dish.
