This Woman Made Lemon Meringue Pie In Her Slow Cooker And It Looks So Easy

Lemon meringue pie has to be one of the tastiest puddings out there. If you go loopy for lemon desserts, this and a lemon drizzle cake are unbeatable.

A couple of weeks ago, we shared a recipe for a slow cooker lemon drizzle cake, and now we have a slow cooker lemon meringue pie recipe for you.

Are we good to you or what?!

We first spotted this super-easy recipe on the Aussie Slow Cooker Recipes Facebook page, where a woman called Peta shared how she’d made mini lemon meringue pies in her slow cooker, and she’d only needed seven ingredients to do it.

Of course, the main ingredient of a lemon meringue pie is the lemon curd, which can so easily be made in a slow cooker.

Slow cooker lemon meringue pie ingredients

  • 3 - 4 tsp lemon zest

  • 250ml freshly squeezed lemon juice

  • 8 eggs, lightly beaten

  • 200g butter

  • 300g sugar

  • Pre-made tart shells

  • Meringue

To make the dessert, Peta uses lemon zest, lemon juice, eggs, butter and sugar. She combines them before placing the mixture in the slow cooker. She turns it on low and stirs it every 15 minutes for a total of 90 minutes.

Peta then scoops the lemon mixture into pre-made tart shells, and tops it with her meringue mixture, which is just whipped egg whites and sugar.

We'd also recommend popping your pies in the oven (180ºC/160ºC fan) for around 12 minutes; just to get a nice golden top to your meringues.
