Smashed broccoli bites
Broccoli is full of magnesium, which is important for over 300 enzyme reactions in the body and is also necessary for calming our nervous system. Meanwhile the Parmesan cheese offers calcium and vitamin B12.

Ingredients
1-2 heads broccoli, depending on their size, around 500g, cut into large florets
50g grated Parmesan cheese
1 tablespoon extra-virgin olive oil
Method
Step 1
Preheat the oven to 200C/180C fan.
Step 2
Heat some water in a pan with a teaspoon of sea salt and bring to the boil. Simmer the 500g broccoli with the lid on for around 5-7 minutes until tender and drain.
Step 3
Line a baking tray with baking parchment and brush with a small amount of the olive oil. Grate over the 50g Parmesan cheese.
Step 4
Transfer the broccoli florets to the baking tray and make sure that there is plenty of cheese underneath each floret.
Step 5
Next, flatten the broccoli floret with the bottom of a glass. Brush the top of the floret with olive oil and season with salt and pepper.
Step 6
Bake in the oven for 20-25 minutes until crispy.
