Simple healthy pancake recipe using just flour and milk will remind you of scones with jam and cream

Pancake Day is just around the corner and if you want to celebrate but don't have any eggs to hand (or just don't eat them), don't worry, as you don't actually need any. Instagram foodie Cakeontherun has shared her simple pancake recipe and it requires just flour and milk.

She uses a non-stick frying pan so doesn't use any oil or butter to keep them low in fat, and likes to top them with low fat Greek yoghurt for added protein. If you're a fan of scones, then you're in luck too as Cakeontherun adds a touch of fruit conserve on top of each pancake to make them look like a healthy version of the traditional British treat.

The recipe below makes 10 mini pancakes, perfect for children, lunch boxes or an after dinner delight. They can easily be made vegan friendly by using soya, oat or coconut milk and similarly, topping them with a plant based yoghurt instead of Greek.

Plus, if you follow a gluten-free diet, simply switch standard self raising flour for gluten free flour, available in large supermarkets such as Tesco and Sainsbury's located down to Free From aisle.

Makes 10 mini pancakes

Ingredients

  • 3 heaped tbsp self raising flour

  • 10 tbsp any milk

Method

  1. Mix flour and milk in a bowl to form a smooth batter.

  2. Fry tablespoons of the batter in a non-stick pan or use light cooking spray. Cook on both sides for a couple of minutes until golden.

  3. Top each pancake with low fat Greek yoghurt or soya yoghurt and jam or fruit purée.

Savoury twist
