Some national food days seem a bit silly. National Granola Bar Day (Jan. 21)? Do we really need that? Or how about National Potato Day (Aug. 19)? Nothing against potatoes. They’re beloved every which way they’re made—mashed, French fried, or baked—so much so that they don’t really need a day to make us remember they exist. Just ask Dolly Parton.

But National Queso Day, Sept. 20? Bring it on. Or rather, “pile it on.” Pile all that warm, creamy queso on top of everything, including French fries and baked potatoes. With this in mind, Qdoba, the fast-casual Mexican restaurant known for its burritos and other Tex-Mex favorites, is putting queso in the spotlight this National Queso Day, and while it’s at it, it's adding a lot of spice to the day.

Qdoba’s New Queso Apocalypto & Chips

If you love heat, Qdoba’s latest menu addition is for you. The restaurant is taking the already spicy Queso Diablo on its menu and using it to make Queso Apocalypto, adding fiery hot crunches, salsa roja, habanero salsa and pickled jalapeños to the mix.

Phew! That’s hot.

If you’re brave enough, head to Qdoba on National Queso Day, Sept. 20, when it drops the Queso Apocalypto for a limited time.

“At Qdoba, we believe queso should be celebrated every day, not just on National Queso Day,” said Kim Zamir, Vice President of Marketing at Qdoba. “Spicy foods are one of this year’s hottest (literally) food trends, and Qdoba has a passion for innovating new menu items our fans will love.”

The queso that threatens to bring on the end of the world is a side dish only, served with chips, starting at $5.95 an order. If that’s too much heat for you, Qdoba isn’t getting rid of its signature 3-Cheese Queso with fire-roasted tomatoes and chilis.

If you don’t have a Qdoba near you, but you still want to celebrate National Queso Day, check out these queso recipes. There’s one in there that will satisfy whatever level of heat you prefer in your cheesy dip.
