Nutritionist's 'delightful' healthy carrot cake loaf that's the perfect breakfast treat

Nutritionist and influencer Emily English has wowed food fans with an indulgent yet healthy breakfast treat - a cake. Using flavours of one of the most popular cakes around - carrot - she’s rustled up the perfect recipe for your next baking adventure.

Emily has gained a lot of attention over the years for creating delectable and healthy recipes, without compromising on taste. One of her creations from October was a sumptuous carrot cake loaf that’s the perfect breakfast pick-me-up.

She captioned the post: “Who wouldn’t want to eat cake for breakfast? This moist, spiced loaf is packed with fibre and healthy fats for a gut-friendly start to the day, with an optional cream cheese maple kefir topping that is just so good.”

If you’re keeping health in mind, one slice of the breakfast loaf has just 250 calories. In the video, Emily said: “I can confidently say that this is one of the best healthy bakes I’ve made yet. This moist, luxurious carrot cake is full of fibre, healthy fats and all of that gut-loving goodness.”

The nutritionist's healthy and indulgent breakfast loaf received a mountain of praise, including from the food wizards at BBC Good Food, who said: “This looks delightful.”

So if you’re looking for a recipe to pimp up your breakfast time, this is what you’ll need for Emily’s loaf.

Breakfast Carrot Cake Loaf

Ingredients

  • ⁠140g dates, pitted

  • ⁠1 scant tsp bicarbonate of soda (for soaking dates)

  • ⁠2 tbsp brown sugar

  • ⁠1/4 tsp each nutmeg and ginger

  • ⁠2 tsp cinnamon

  • ⁠2 large eggs

  • ⁠180g grated carrot

  • ⁠50g chopped roasted mixed nuts

  • ⁠150ml olive oil

  • ⁠2 tsp baking powder

  • ⁠100g wholemeal flour

  • ⁠3 tbsp milk

  • ⁠100g jumbo oats

  • ⁠Zest of 1 orange

Maple Cream Cheese Kefir Topping

  • ⁠100g kefir yogurt

  • ⁠100g low-fat cream cheese

  • ⁠1–2 tbsp maple syrup

Method

Soak dates in 150ml hot water with bicarbonate for ten minutes, drain, and reserve two to three tablespoons of liquid. Blend dates and reserved liquid to a paste.

Mix the date paste with sugar, eggs, and olive oil until smooth, then stir in carrots, nuts, and zest. Add flour, baking powder, spices, and oats, mixing gently.

Add milk, pour into a non-stick loaf tin, and bake at 160°C for 40 to 50 minutes. Let cool completely.

For topping, blend kefir yogurt, cream cheese, and maple syrup until smooth. Spread over each slice. Enjoy!
