This 'mind-blowing' Tunnock's caramel wafer cake requires no baking
Tunnock's Caramel Wafers are one of the nation's most beloved treats with the factory, based in Uddingston, making a staggering six million of the chocolate, caramel and wafer bars every week.
Appreciated for its nostalgic charm and irresistible taste, Tunnock’s has become a true Scottish icon. Luckily, one clever social media influencer has cracked the code on how to create cakes using these iconic wafers right in your own kitchen.
Taking to her The Scottish Wanderlust Instagram page, Heather Macrae shared how to easily make your very own Tunnock’s Caramel Wafers cake. “If you love @tunnocks Caramel Wafers as much as I do, then this Tiffin cake is going to blow your mind!” she said.

“It’s the perfect no-bake treat—chocolatey, crunchy, caramel-filled, and ridiculously easy to make.” Heather subsequently revealed to her nearly 20,000 followers the ingredients you’ll need and the instructions.
Ingredients
8 Tunnock’s Caramel Wafers, chopped into small pieces
200g digestive biscuits, crushed
100g unsalted butter
2 tbsp golden syrup
200g milk chocolate (for the base)
200g dark chocolate (for the topping)
50g white chocolate (optional for drizzling)
Heather also added in raisins and a few marshmallows
Instructions
Prepare the base: In a saucepan, melt the butter, golden syrup, and milk chocolate over low heat, stirring until smooth. Crunch it up: Remove from heat and stir in the crushed digestives and chopped Tunnock’s wafers.
Mix until fully coated. Set it: Press the mixture into a lined baking tin and flatten with the back of a spoon.
Pop it in the fridge for at least 1 hour to firm up. For the chocolate topping: Melt the dark chocolate and pour it evenly over the set base.
“If you’re feeling fancy, drizzle some melted white chocolate on top for a swirled effect,” Heather shared. Final chill: Let it sit in the fridge for another hour before slicing into indulgent squares.
“That’s it! The hardest part is waiting for it to chill before diving in,” the foodie concluded. “Every bite is a mix of creamy chocolate, crisp biscuit, and the unmistakable caramel goodness of Tunnock’s wafers.”
