Julia Bradbury shares the powers of mushrooms Good Housekeeping - Hearst Owned

It's no secret that it's good to squeeze more fruit and vegetables into your everyday meals, but TV presenter, Julia Bradbury, has opened up about why fungi is another essential staple in her diet.

The former Countryfile host was diagnosed with breast cancer in August 2021. Since her diagnosis, Julia has become even more focussed on the magic of Mother Nature.

Julia - who will be appearing at Good Housekeeping Live - recently released a book, Walk Yourself Happy, which looks at the link between our health and the natural world.

Taking to Instagram, Julia revealed that while on her book tour, plenty of fans were interested in hearing about her daily diet.

"As a lot of you know, I now have a savoury breakfast, I ditched the cereals," she said, before pointing out that it's always best to experiment with flavours, herbs and spices.

She went on to share one variation of a savoury breakfast, which included mushrooms cooked in olive oil, fresh rosemary & garlic.

Julia wrote: " 🍄 Mushrooms have about 15 vitamins and minerals, including vitamin B6, folate magnesium, zinc and potassium. 🍄 They’re also rich in antioxidants, such as ergothioneine and selenium, which are both anti-inflammatory compounds."

She added: "🍄And they’re one of the few foods that have vitamin D, which is important for building strong bones, reducing inflammation and improving immune function. 🍄 TIP from my followers: place the mushrooms in daylight before cooking and they'll produce even more Vitamin D - like humans 😉"
