Healthy tomato soup recipe uses unconventional ingredient and boasts 22g of protein
A home cook has shown off how you can make a healthy tomato soup recipe in just minutes without sacrificing on flavour. Piera Cafolla, the brains behind Plates and Plans, rustled up a simple tomato using just six ingredients.
To increase its nutritional value, Piera revealed there’s a secret ingredient she uses to amp up the protein content. In a TikTok video from earlier this month, Piera demonstrated just how easy making soups can be.
Her secret ingredient? Cottage cheese. The soup boasts a generous 22 grams of protein and is just 201 calories per serving.

Lauren explained: “Keyword, low heat like lower than low or else your cottage cheese will curdle.”
Others shared their praise for the minimal fuss soup, with @shazzanim saying: “I made this! It was delicious. Great for getting in the protein.”
Annie wrote: “This. This is exactly what I needed,” while Holly commented: “Oh my goodness you’re a genius!!!!” Kirsty agreed: “What a life hack, no chopping needed.”
To recreate Piera’s protein-packed tomato soup, this is what you’ll need to do.
Healthy Tomato Soup
Ingredients
400g tinned tomatoes
300g cottage cheese
100g roasted red peppers
1 tsp minced garlic
1 tsp crushed chillies
Handful of fresh basil
Method
The recipe is so simple to complete, you’ll need to come armed with a blender or a handheld immersion blender. Place all of the ingredients into your blender, or into a large mixing bowl or sauce pan.
Blitz together until you get a smooth consistency. Once blended, place the soup into a saucepan, cooking it over a low heat, stirring continuously.
Once heated to the desired temperature, remove from heat. Serve in a bowl and enjoy!
