Healthy high protein mini banana bread that won’t make breakfast ‘boring and repetitive’
A breakfast fan has wowed her followers with her delectable and healthy mini banana bread loaves, which can help you increase your protein intake. Alice, also known as @alicelovesbreakfast on TikTok, hailed these as the perfect recipe to make sure breakfast isn’t “boring”.
As a part of her ‘Protein Powerhouses’ series, Alice has been sharing a variety of recipes where you can pack on the protein. In a video from earlier this month, Alice shared the details of her ingenious mini banana breads which are perfect for breakfast.
She captioned her video: “This is day 21/100 of my series PROTEIN POWERHOUSES, where I will be sharing a new recipe using different protein sources for 100 days, to show you that breakfast doesn’t have to be boring or repetitive.

“These one bowl high protein mini banana breads are going to be your new go to high protein snack. They contain no added sugar and are so quick to make.”
For anyone introduced in the banana bread’s macros, you’ll find 14.8 grams of protein, three grams of fat, and 35 grams of carbs, as well 275 calories.
Alice’s video has been viewed over 878,900 times, racking up 45,500 likes and 80 comments, with a number of foodies showering her recipe with praise. Daniella said: “These look so good!”

High Protein Mini Banana Bread
Ingredients (make eight)
2 medium bananas, mashed
60g protein powder
170g Greek yoghurt (high protein yoghurt)
50ml honey or maple syrup
2 large eggs
1 tsp vanilla extract
280g oat flour or blended oats
1 tsp cinnamon
1 tsp baking powder
1/2 cup dark chocolate chips, extra for toppings
Method
Preheat your oven to 180℃. Whisk your eggs, banana, yoghurt, honey and vanilla extract in a bowl.
Add the oat flour, baking powder, protein powder and cinnamon into the wet mixture and stir together well. Fold in the chocolate chips and transfer to a greased mini loaf pan.
Top with extra chocolate chips. Cook for 15 to 20 minutes in the oven until golden brown and cooked through.
Leave to cool and store in an airtight container.
