In 2020, the Veganuary movement had a record 400,000 people sign up worldwide for its January vegan diet pledge. With this figure set to rise in 2021, the big question is what to eat for a whole month without meat?
For those with time for planning and preparation, plant-based recipes are easier to find than ever and meat-free alternatives, such as vegan sausages, burgers and bacon readily available in the shops.

To help those on the road to veganism this year, recipe box brand Gousto has launched a new vegan range for Veganuary. What’s more, the menu sounds delicious!
With the aim of providing substitutes for the dishes you’ll miss most in Veganuary for those following a plant-based diet, the recipes include vegan beet Wellington with onion gravy, plant-based spaghetti carbonara and a plant-based bacon cheeseburger.
GH Food specialist Alex Hale got her hands on a few recipes from the new menu. Here's what she thought of them...
Vegan Tofu 'Fish' Fingers, Minty Peas & Tartare Sauce
Description: Battered, crumbed tofu fingers with a homemade tartare sauce, oven chips and minted, crushed peas.
Ingredients: The ingredients for this recipe came almost totally plastic-free, which was very satisfying to see and all I needed to supply was flour, oil, salt and pepper.
How long does it take? Whilst this should take 35minutes, it took closer to an hour in total, however it's totally worth the time for an indulgent weekend meal.
What does it taste like? This tasty dish has an array of flavoursome components and wonderful textures. Sweet and minty crushed peas; fluffy, crispy chips and a creamy yet tangy vegan tartare sauce. The stars, however, were the perfectly crunchy tofu fingers, seasoned with soy sauce and a gently curried spice. This ticks all the boxes for flavour and texture, offering a well-priced and substantial supper.
Smoky Pulled Aubergine Tacos With Avocado Salsa
Description: Roasted aubergines in a home-made BBQ sauce, served in warm tortillas with a lime and avocado salsa and pickled red cabbage.
Ingredients: Much like the vegan tofu-fingers, the environmentally friendly packaging was very satisfying, with only a few plastic-wrapped items. All you need from your store cupboard are oil, salt and pepper.
How long does it take? This recipe took 45 minutes from start to finish
What does it taste like? Soft, warm fluffy wraps are filled with sweet, smokey, melty aubergine. The red cabbage slaw adds a great crunch with all the flavours balanced by the tangy lime, coriander and avocado salsa. This is a light, fresh-tasting, and veg-packed meal giving you 3 of your 5 a day.
