How to make homemade almond butter
Use unsalted, raw almonds. This will yield smooth, creamy almond butter that’s easy to customize.
Preheat oven to 350° F.
Spread almonds on a baking sheet.
Roast for 10-12 minutes, or until they’re fragrant and slightly golden brown. Roasting almonds will help release their oils and make them easier to grind into a smooth butter.
Remove from oven and let cool completely.
Grind almonds in a food processor or blender. Start by pulsing the almonds a few times to break them up. Then, blend on high speed until the almonds are smooth and creamy. Patience is key.
Tip: Start with a small amount of almonds. If you add too many almonds at once, the food processor may not be able to handle them and the almond butter will be lumpy.
Tip: Stop and scrape down the sides of the food processor with a spatula as needed. This will help the almond butter blend evenly.
If the almond butter is too chunky you can add a neutral oil like olive oil, one tablespoon at a time, to help smooth it out.
For a more robust flavor, you can add a pinch of salt and a teaspoon of honey to the almond butter. You can also add other flavor enhancers like cinnamon, vanilla extract, maple syrup or almond extract. Mix as you add.
Store the almond butter in an airtight container in the refrigerator. It will keep for up to 2 weeks.

If the almond butter is too thick, you can add a tablespoon of water or almond milk to thin it out.
