Ingredients

  • 2 tsp toasted sesame oil

  • 1 tbsp rice-wine vinegar

  • ½ tsp minced garlic

  • ¼ tsp low-salt soy sauce

  • 85g grilled, skinless chicken breast

  • 200g cooked bulgur

  • 60g roughly chopped spinach

  • 2 tbsp chopped spring onion

  • 220g shredded carrot

  • 1 tbsp chopped, roasted, salted peanuts

Method

  1. Whisk 2 tsp toasted sesame oil, 1 tbsp rice-wine vinegar, ½ tsp minced garlic and ¼ tsp low-salt soy sauce.

  2. Using a fork, shred an 85g grilled, skinless chicken breast.

  3. Toss 200g cooked bulgur with 60g roughly chopped spinach.

  4. Top with 2 tbsp chopped spring onion, 220g shredded carrot, the shredded chicken and 1 tbsp chopped, roasted, salted peanuts.

  5. Drizzle with the dressing. Imbibe with joy.
