This playful take on the Middle Eastern classic is loaded with both style and flavor, and it’ll be a show-stopping centerpiece for any dinner party. Ingredients

  • 4 cups dried chickpeas

  • 1 small red onion, divided

  • 4 cloves of garlic

  • Falafel spice mix (4 tsp cumin , 4 tsp coriander, 4 tsp black pepper, 3 tsp salt, 1 optional tsp cayenne pepper)

  • 1 cup mixed cilantro and parsley

  • 6 oz baked butternut squash

  • Pinch of turmeric

  • 1 cooked and peeled beet

  • 4 tsp baking powder, divided

  • Olive oil

Directions

  1. Divide 4 cups of dried chickpeas into 4 separate bowls.

  2. Cover the chickpeas with 2 inches of water and soak overnight.

  3. Make the yellow falafel. Add the chickpeas to a food processor, then add sliced red onion, 1 clove of garlic, and 1 tsp of falafel spice mix. Blend until smooth.

  4. Make the green falafel. Add the chickpeas to a food processor, then add sliced red onion, 1 clove of garlic, 1 tsp of falafel spice mix, and 1 cup of mixed cilantro and parsley. Blend until smooth.

  5. Make the orange falafel. Add the chickpeas to a food processor, then add sliced red onion, 1 clove of garlic, 1 tsp of falafel spice mix, a pinch of turmeric, and 6 oz of baked butternut squash. Blend until smooth.

  6. Make the red falafel. Add the chickpeas to a food processor, then add sliced red onion, 1 clove of garlic, 1 tsp of falafel spice mix, and 1 cooked and peeled beet. Blend until smooth.

  7. Scoop each falafel mixture into 4 separate bowls, then add 1 tsp of baking powder to each mixture and stir.

  8. Heat about 2 inches of olive oil in a skillet.

  9. Scoop 1 ½ tbsp of falafel mixture into the skillet and fry for about 3-4 minutes.

  10. Once cooked, take out the falafel and place it on a paper towel to dry. Dig in!
