Budget pasta recipe that will make your partner fall in love with you this Valentine's Day

Valentine's Day is known as the day of love. It gives couples the perfect chance to celebrate their relationships and show their appreciation for one another.

However, some people don't enjoy spending February 14th in a packed out restaurant watching other couples pack on the PDA.

Many prefer to stay at home and mark the occasion with a meal cooked from the heart and we have the perfect one that promises to be a huge hit with your partner this Valentine's Day.

This pasta recipe made by Paige, from @glutenlesspaige on TikTok, is a take on cook Lindsay Funston's 'marry me chicken'. The popular dish got its name from an accidental comment made by a video producer who tasted the dish and said, "I'd marry you for that chicken!"

Paige described her take on the famous dish as 'so good people will be asking to marry you'.

This recipe makes four portions and can be easily adapted to make it dairy free or vegan.

Ingredients

  • 200g gluten free pasta

  • 2 chicken breasts

  • 1 red onion

  • 2 garlic cloves

  • 2 tbsp tomato puree

  • 6 chopped sun dried tomatoes

  • 200ml chicken or vegetable stock

  • 60ml double cream

  • 6 chopped basil leaves

  • 1 tbsp olive oil

  • 1/2 tsp garlic powder

  • 1/2 tsp paprika

  • 1/2 tsp Italian herbs

  • 1/2 tsp dried chives

  • Salt and pepper to taste

  • As much Parmesan as you like!

Method

  • Boil your gluten free pasta of choice. Make sure to save 100ml of pasta water.

  • Add the olive oil, diced chicken, herbs, spices and garlic to a fry pan and mix well. Once the chicken is cooked, remove this from the pan.

  • Add the onion, tomato puree and sun dried tomatoes into the same pan and fry for 2-3 minutes. Add the stock and mix well. Cook this for 5-10 minutes before adding the cream

  • Mix well and add in the Parmesan. Add the chicken and chopped basil back into the pan and mix. Add 100ml of pasta water to thin the sauce out. When the pasta is cooked, drain it and add it to the sauce. Mix well and serve. I like to add a little bit more Parmesan and chopped parsley on top!
