Bonfire Night savoury s'mores recipe perfect for toasting over a fire
We’re all familiar with the popular American campfire snacks s’mores, made with graham crackers, marshmallows and chocolate. But a cheese fanatic has shared an innovative creation, making the treat savoury rather than sickly sweet.
Emmy, who goes by Sophisticated Spreads, runs a bohemian-inspired cheeseboard business, creating grazing tables for the masses in Los Angeles, California. Switching up the classic campfire treat, Emmy swapped out marshmallows for gooey, melty cheeses, going viral for her cheesy snack.
In a video from September, Emmy shared a sneak peak of her ‘savoury s’mores’ recipe featuring mini brie cheeses toasted over a fire. Once melted, she spread the cheese on a cracker and topped with some hot honey.

Her video has been viewed over a massive 2 million times, receiving 60,200 likes and 279 comments. Food fans were amazed by Emmy’s snack, with Ella saying: “Oh now see this is innovative.”
Another said: “I don’t show how to feel….is that a mini Brie???? I’m so intrigued,” while Bekah commented: “Oh now that’s not…a bad idea.”
San Andrea agreed: “You just changed the game.”
In another video, Emmy explained how you can make your own savoury s’mores, detailing her picks for cheeses and accompaniments. She said: “I used some cheeses that would get the ooey, gooeyness I was looking for. Of course you have to use ‘skewer-able’ cheeses - if that’s even a word - so I used BabyBel, Trader Joe’s Mini Brie Bites and a habanero cheddar, as well as Saint Andre.
“For your pseudo-graham cracker base, you definitely need a strong cracker, and then add a little drizzle of something delish. I tried a hot honey, and boy, did that pair well with the creamy, gooey cheeses.
“The only rule about savoury s’mores is that there are no rules, so put whatever you in and enjoy.”

Method
Place the cheeses on a skewer, and let the toast over a fire until they’ve coloured and melted enough.
Carefully remove the cheese from the skewer and place on top of a sturdy cracker. Then top with the hot honey or chutney of your choice.
You can also add some charcuterie meats onto the s’more too - there are no rules! Tuck in and enjoy.
