Quick chicken with carrot, rice noodles & pak choi

Ingredients

50g caster sugar by Sainsbury's

25ml light soy sauce

25ml rice vinegar

1½ tablespoon toasted sesame oil by Sainsbury's

1 tablespoon grated fresh ginger

1 teaspoon chilli flakes by Sainsbury's

300g Just Stir Fry… rice noodles by Sainsbury's (no need to cook)

1 whole rotisserie chicken, skin removed & meat shredded

1 Granny Smith apple, unpeeled & grated

3 medium (about 180g) carrots, grated

1 x 200g pack pak choi by Sainsbury's, washed & finely chopped

6 sprigs fresh mint, leaves picked & finely chopped

From your store cupboard

1 garlic clove, finely chopped

Method

  1. 1. Dissolve the sugar in 60ml hot water. Pour into a bowl and mix with the soy sauce, rice vinegar, sesame oil, garlic, ginger and chilli flakes. Set aside.

  1. 2. For the salad, mix the apple, carrots, pak choi and mint together in a large bowl, then add in the noodles and chicken. Pour over the dressing and mix well to serve.

Cook's tip Try this salad with cooked prawns or leftover thinly sliced beef.
