'Amazing' healthy blueberry muffin recipe with surprising ingredient and low in sugar

Even though the New Year rings in resolutions and goals to stay healthy, it doesn’t mean you can enjoy some of your favourite treats. One chef has shared his take on some scrummy blueberry muffins that don’t compromise on taste, but are significantly healthier than shop-bought ones.

In a recent TikTok video, Max McCann, who goes by Meals with Max, revealed his surefire recipe for the ultimate healthy blueberry muffins. He said: “Did you know you could make blueberry muffins at home that are healthy and taste delicious?

“And not only that, they are way lower in sugar and higher in protein than typical muffins you get at the supermarket. And they’re super easy to make.”

Instead of using refined sugar, Max creates his muffins with honey, which resemble the texture of a classic muffin with Greek yoghurt and bananas. Max’s muffins also boast 154 calories, 4.8 grams of protein and 10 grams of sugar per portion.

That’s in comparison to an average supermarket blueberry muffin, which has 290 calories, 3.5 grams of protein and 19 grams of sugar. What’s more is that you don’t need to be a star baker to whip these up at home.

Max’s video has already been viewed over a massive 468,300 times, receiving 12,300 likes and 217 comments. Sian said: “I am sooo trying these... look amazing and I've put on so much weight and type 1 diabetic so really need to drastically make some changes, love cake tho.”

George said: “Just made mine delicious, and chia seeds.”

Bee said: “It's 9.13pm Thursday I've just seen this and decided I'm making them tomorrow.” Sophie said: “Been making pretty much every week since you first posted this and they are still a fan fav in our home! Perfect snack for my kids (minus the salt).”

So if you’re looking for a simple baking recipe that’s good for your health, this is what you’ll need.

Healthy Blueberry Muffins

Ingredients

  • Two ripe bananas

  • 80g honey

  • 200g Greek yoghurt

  • One tsp vanilla extract

  • Two eggs

  • 200g blended oats

  • One tsp baking powder

  • One tsp salt

  • Handful of blueberries

Method

Mash the bananas in a bowl. Once they’re fully mashed, add in the honey, Greek yoghurt and vanilla.

Give it a good mix before adding in the eggs, and mix again. Then add in the oats, baking powder and salt.

Mix all the ingredients together until fully combined. Pour in the blueberries and fold them in.

Portion into ten muffin cases. Bake the muffins at 180℃ for 20 minutes.

Once cooked, allow to cool and then tuck in.
