You might find Niçoise salad on the menu at a fancy French bistro. But did you know you can easily make the same dish at home for a fraction of the cost?

This 10-minute dinner is plenty filling, absolutely delicious, and even pretty affordable! How's that for a winner? If you don't love anchovies, you can skip them, but if you're unsure, give 'em a try at least once. They pack a ton of flavor and balance out the dish well.

Ingredients

  • 1/4 c.

    plus 2 tablespoons olive oil

  • 3 tbsp.

    white wine vinegar

  • 1 tbsp.

    Dijon mustard

  • 1

    small shallot, chopped

  • Kosher salt and freshly ground black pepper

  • 1

    baguette, halved lengthwise and crosswise, toasted

  • Bibb or butter lettuce leaves

  • 2

    (5-ounce) cans oil-packed tuna

  • 8 oz.

    green beans, blanched

  • 1/2 c.

    Kalamata olives

  • 1 c.

    grape tomatoes, halved

  • 4

    radishes, thinly sliced

  • 4

    soft-boiled large eggs, halved

  • 16

    anchovy fillets

  • Potato chips, for serving

Directions

  1. Whisk together oil, vinegar, mustard, and shallot in a bowl. Season with salt and pepper. Spread 2 tablespoons of dressing on the cut side of each piece of toast. Top with lettuce, tuna, green beans, olives, tomatoes, radishes, and anchovies. Serve with eggs and potato chips alongside.
