5 Quick And Easy Vegan Breakfast Recipes

Breakfast is said to be the most important meal of the day, but when you end up spending more time in front of the make up mirror than at the breakfast table, it’s easy to skip breakfast or opt for something bland just because it’s quick.

Here are 5 easy and extremely tasty recipes that take under 10 minutes to make. They don’t require any special ingredients, as you are likely to stay stocked up on them anyway, and they will keep you full until lunch time.

1. The Breakfast Burrito

Extremely filling and totally delicious, this burrito makes for a great on the go dish. Simply take a wrap, fill with tasty ingredients, top with cheese, melt in the microwave, fold and go! If you find that you are always starving in the morning, then this one is perfect for you and if you know you will be having a late lunch, its sure to last you into the afternoon.

Ingredients:

  • 1 vegan wrap

  • 1 pepper (diced)

  • 3 mushrooms (diced)

  • ½ onion (diced)

  • ¼ can of black beans

  • ¼ can of refried beans

  • 1 handful of vegan cheddar cheese

  • ½ packet of brown rice

  • 1 handful of spinach

  • ½ a block of tofu, broken up until it resembles ‘scrambled egg’

Make it:

First, heat your rice and lay out the wrap. Spread your refried beans all over the wrap and then add the rice to just the middle in a straight line.

Heat your peppers, mushrooms, onions and tofu in a pan and add the spinach for 1 minute at the end. Place this to each sides of the rice. Sprinkle the black beans evenly and top with the cheese.

Heat for 30 seconds in the microwave, wrap in to tinfoil and go!

2. Smashed Avocado on Toast

Tasty, quick and filling. If like me you struggle to eat breakfast and are rarely hungry in the early hours, opt for one or two slices of this delicious classic.

You can keep it plain, or add lemon, chilli flakes or rock salt to your avocado after smashing, depending on your mood!

Ingredients:

  • 2 slices of vegan bread

  • 1 avocado mashed

Make it:

Scoop out the avocado and mash in a bowl, then add anything you desire or leave plain.

Toast the bread, the spread the avocado on top.

Easy, quick, super simple and ridiculously tasty!

3. The sweet and fruity yoghurt pot

Taking less than 5 minutes to make, this summery classic is great for the warmer days. It won’t keep you full for hours but it’s a great option if you don’t have time to cook and it’s great if you fancy something cold and refreshing!

Top with any fruit you like and change the flavour yoghurt to vanilla or coconut if the plain one gets too repetitive, or alternatively, if you are avoiding soya, use coconut yoghurt or make your own!

Ingredients:

Half a pot of Alpro Soya Plain Yoghurt


Drizzle of agave nectar


Selection of fruits


Make it:

Simply empty half of the yogurt into a bowl and drizzle with agave nectar and top with fruit, then add the other half of the yogurt and add the rest of the fruit. Drizzle with agave nectar for extra yumminess!

4. Scrambled tofu on toast

An absolute classic dish for breakfast, just vegan style! Either have plain, add avocado or peppers or use refried beans as a base…so many ways to enjoy this quick brekkie!

Ingredients:

  • 2 slices of vegan bread

  • ½ a block of tofu

  • Vegan butter

  • Salt and Pepper to season

Make it:

Break up your tofu so it resembles scrambled egg and heat in a frying pan, season with salt and pepper and leave to cook, stirring occasionally.

Meanwhile, toast your bread and then spread with butter.

Top with tofu, take a photo and enjoy!

5. The Smoothie

Some mornings, I dread eating solids and just want a filling smoothie that I can drink in my own time. The best thing with smoothies is that you can change the flavour 100 times over and use a mixture of whatever you have in the house.

Simply blitz everything together, pop into a cup you can carry and head to wherever you need to be.

Ingredients:

  • 400ml of rice, oat, soya or coconut milk

  • Selection of fruit: Mango, Melon and Banana or Strawberry, Blueberry, Raspberry and banana for example

  • 1 teaspoon or hemp powder (optional)

  • 1 teaspoon of maca powder (optional)

Make it:

In a blender, add the milk and fruit and add a teaspoon of both hemp and maca powder.

Blitz, pop in a cup and enjoy!
