To prevent a grainy texture, take it out of the oven while the centre is still not quite set – and to prevent cracking, run a knife around the rim of the tin. To make it, top a biscuit base with a mixture of cream cheese, crème fraîche, melted chocolate and cream. In this recipe, the 'cream cheese' is made with soaked cashew nuts, but you could also use macadamia nuts for a slightly sweeter flavour and creamier texture.
