This 2-Minute Dip Tastes Like a Million Bucks

Allstar Lisa Altmiller needed a dessert for a last-minute pool party, and she came up with the best 3-ingredient dip for summer.

They say necessity is the mother of all invention, and that couldn't be more true of the day Altmiller came up with this incredibly tasty dip.

“I was born and raised in Scottsdale,” Altmiller says. “On one particularly brutally hot day, a neighbor invited me to a last-minute pool party. I don’t like to show up empty-handed, but I didn’t have a lot of food in the house and going to the grocery store in 115˚F heat was out of the question. So I grabbed some fruit to make a platter, but I also wanted a dip to go with it. I had a brand new container of sour cream, so I added some vanilla and sugar until it tasted sweet but still tangy. I stuck it in a bowl and placed it in the middle of the fruit plate. Everyone loved it—so much so that two people asked me for the recipe. They were surprised it had only three ingredients,” she says.

The best part? The recipe is not much of a recipe at all. It’s more of a taste-as-you-go process; you can add sugar until it tastes perfect to you. As a general guide, Altmiller likes to use about three tablespoons of sugar per pint of sour cream, and about one teaspoon of vanilla extract. You can always add more or less sugar depending on your tastes, but the key is that you want to preserve some of the tanginess of the sour cream. This is what makes the dip irresistible; imagine the flavor of cheesecake but with so much less work! To reach the perfect texture, whisk the mixture until the sugar dissolves so you have a super smooth and creamy consistency.

Altmiller likes to use Knudsen Sour Cream, which is local to California, but any full-fat sour cream will do. To serve, set up a rainbow of fresh fruit and watch this magical dip disappear. “I served it with apples this morning for a quick snack, but it goes well with all berries, grapes, and bananas,” she says. Given its sweet and tangy profile, this dip would also work well on a snack board with items like chocolate-covered pretzels, cookie thins, and graham crackers. To intensify the flavor of the dip, try swapping the vanilla extract for vanilla bean paste. Not only will it give the dip a gorgeous deep vanilla flavor, it will also speckle the dip with vanilla bean seeds for festive flair. Just be prepared to field lots of questions from party-goers–they are definitely going to want this quick and easy recipe!

Lisa Altmiller’s 2- Minute Sour Cream Dip

  • 1 pint full-fat sour cream

  • 3 to 4 tablespoons granulated sugar, or more to taste

  • 1 teaspoon vanilla extract

In a medium bowl, whisk all ingredients together until the sugar has dissolved. Taste the dip, adding more sugar and vanilla if desired. Serve alongside fresh fruit.
