The 2-Ingredient Dessert I Can’t Stop Making

I’ll be honest: I’m not usually the kind of person who asks to see the dessert menu at the end of the meal. Don’t get me wrong, I love a sweet treat as much as the next person, but I’d rather fill up on my main course and enjoy a homemade cookie or bowl of ice cream later in the comfort of my home—once I’m in my stretchy sweatpants (à la Joey from “Friends” in his “Thanksgiving pants”).

However, when I’m on a trip, that whole philosophy goes out the window—especially when it’s a business trip, and the person who organized the dinner says they practically developed the dessert recipe just for you. Sure, this might not be a relatable problem to have, but as a food editor, it’s my duty to try everything.

And, on a recent trip to the Re-Treat Suite by Rice Krispies Treats in Cape Cod, boy, am I glad I stuck to that task.

After a delectable dinner, the waitstaff brought out the desserts, specially developed by Wequassett Resort and Golf Club's Executive Pastry Chef Ashley Corrao using Rice Krispies Treats (ever on-theme). I may have been stuffed, but one look at the Rice Krispies Treats ice cream sandwich, and I knew I had to make room.

That’s right, it was an ice cream sandwich made with two sweet, marshmallowy, nostalgic Rice Krispies Treats. So, of course, I had to try every flavor.

How To Make Rice Krispies Treats Ice Cream Sandwiches

The Rice Krispies Treats ice cream sandwiches were served in three flavors: Classic Rice Krispies Treats stuffed with sprinkles ice cream, Homestyle Rice Krispies Treats sandwiched with strawberry ice cream, and the new Chocolatey Peanut Butter Rice Krispies Treats filled with chocolate ice cream.

Corrao uses frozen mousse in the center instead of ice cream because she says it’s the “secret ingredient to keeping the bars from melting,” but when recreating them at home, I’m opting for store-bought ice cream.

“I actually grew up eating Rice Krispies Treats ice cream sandwiches, so I was thrilled to have the opportunity to share these with others," Corrao tells Allrecipes. "Of course, everyone has enjoyed a traditional Rice Krispies Treat, but this spin on a classic ice cream sandwich brings together the best of both worlds,”

After trying the new take on the nostalgic treat, all I can say is, wow, how did I not think of doing this before? I actually don’t normally enjoy traditional ice cream sandwiches, because the texture of the soft cookie and cold, melty ice cream doesn’t really work for me. But, using frozen Rice Krispies Treats instead completely solves that problem.

All three flavors were fantastic, too—but, honestly, once you try Homestyle Rice Krispies Treats, you can never go back to the classic.

Making the delicious treat at home couldn’t be easier. All you need is a package of your favorite Rice Krispies Treats (or homemade ones if you want to put in a little more effort) and any store-bought ice cream.

To make the sandwiches, you’ll line a pan with Rice Krispies Treats, then top them with ice cream or mousse, and add another layer of Rice Krispies Treats on top. Simply freeze them—and cut them to your desired size, if you’re using the mega-sized treat—and enjoy.

Corrao’s aforementioned flavor combinations are all fantastic, but she also suggests trying the Rice Krispies Treats Strawberry bars with chocolate ice cream and the Rice Krispies Treats Chocolatey Chip Cookie Dough bars with chocolate ice cream.

My suggestion is to play around—if you're using store-bought ice cream, you have so many flavor combinations at your disposal. Maybe add chocolate chip cookie dough or brownie batter ice cream between the Rice Krispies Treats instead.

The creations are endless, and each one will yield a scrumptious, nostalgic frozen treat that you’ll want to make again and again. I know I'm hooked.
