Baking at Easter is a relaxing way to enjoy the long weekend – from Easter biscuits to Easter cakes and other sweet treats. We love cupcakes because they are easy to bake and fun to decorate (especially with little ones!).
Carrot cake is welcome at any time of year but feels especially right at Easter, so we have developed these simple carrot cake cupcakes topped with a swirl of cream cheese frosting.
Our speckled egg cupcakes also feel right for the season – the icing is flecked with a mixture of cocoa powder and water so it looks like the surface of a delicate egg.

Tips on how to make Easter cupcakes
• To divide the batter evenly between each cupcake use a small mechanical ice cream scoop to add the same amount of mixture in each case.
• Pointy tops on cupcakes can be hard to decorate. If your cupcakes have peaks that need cutting off before decorating use a little less baking powder next time.
• To achieve a perfect swirl of icing on top of the cupcake fit the piping bag with a large open star nozzle, such as the Wilton 1M. It can be used to make a pretty ‘rose’ swirl too.
• If you are batch making cupcakes, you can bake them in advance and freeze. Just arrange cooled, un-iced cupcakes on a tray and freeze them uncovered, until solid. Carefully bag or box the frozen cakes up and store for up to a month.
