My 1-Ingredient Upgrade for Better Avocado Toast (Works Every Time)

Call me a stereotypical millennial, but an avocado toast is still my go-to breakfast. Top it with some soft scrambled eggs and a side of bell peppers (I try to get vegetables at every meal!), and it is, in my humble opinion, the perfect light breakfast.

However, with any recipe, if you make it too often, you start to get bored. The flavors aren’t as exciting anymore, and if you are someone who loves food, you don’t feel satisfied settling for the same old boring breakfasts every single morning.

My 1-Ingredient Upgrade for Avocado Toast

That must have been what inspired me to take a big tablespoon of pickled pepperoncini juice and dump it into my avocado mixture one morning. I love pepperoncini, and I had purchased a jar of pickled pepperoncini for a recipe Wishbone Kitchen’s Meredith Hayden had posted on her Instagram for her Sunday Snacks series (the Spanish Nachos to be exact, which you should absolutely try).

After dumping about a tablespoon of pickling liquid into my avocado along with olive oil and Trader Joe’s Chili Onion Crunch Sprinkle Seasoning Blend, I threw a couple of pepperoncini pieces in there for good measure and spread this heavenly combo on my toast.

Why Pepperoncini Juice Belongs In Your Avocado Toast

When I tell you that this is the perfect little addition to a classic breakfast, I really mean it. The pepperoncini and their pickling liquid perk up the whole dish by adding a slight tang and spice, but not enough to upset your stomach for the rest of the day. I don’t know about you, but I’m not a big fan of super spicy breakfasts on a weekday morning.

My one note would be to make sure not to add too much liquid. Flavor-wise, it will still be amazing, but it will make your avocado mixture more liquid, which is not ideal for topping toast. I have found one tablespoon is enough, depending on how much avocado you are using (I’m usually using half of a regular sized avocado or one small avocado).

Other Ways To Use Pepperoncini and Their Brine

If you’re not someone who usually has pickled pepperoncini in the house and are looking for more reasons than just avocado toast to justify making a purchase, know that these little green peppers are super versatile. You can use them to top a green salad, or mix them into a chicken, tuna, or chickpea salad.

I love using pickling liquid for homemade salad dressings, and pepperoncini juice would make a great tangy yet spicy dressing for this Copycat Olive Garden Salad or this Epic Pizza Party Salad.

While I would love for you to try my avocado toast upgrade, I am just as interested in getting a jar of pickled pepperoncini into your pantry. The little peppers are a great way to—as the millennial generation’s favorite girl band, The Spice Girls, would say—“spice up your life.” Or, at least your breakfast.
