Meet Charlie. Charlie is a white chocolate and Biscoff version of our beloved Colin. And you just tell me he doesn’t look like the tastiest little fella you’ve ever seen.
Charlie is the brainchild of Beth, whose website and Instagram account, Vecreation, is a plethora of baked treats. Beth makes vegan versions of our favourite iconic snacks and bakes, and they all look incredible.
So, yeah, Charlie is not only totally delicious and adorable, but he’s also vegan! And they say the perfect man/caterpillar doesn't exist...
To make the sponge, Beth uses vegan egg substitute, aquafaba. This is the liquid that canned chickpeas come in. This stuff can also be used to vegan meringues. Pretty smart, eh? Beth also uses vegan white chocolate, which you can pick up in most good supermarkets.
