Try Katie Austin’s One-Pan Zucchini Pasta for Your Next Quick and Easy Weeknight Meal

During the work week, we’re sure the last thing you want to do is spend over an hour making dinner, no matter how delicious it ends up being. We assume as much because it’s exactly how we feel. But what if we told you that didn’t have to be the case—that you could make a delicious weeknight dinner with little time and little hassle?

Enter fitness instructor Katie Austin’s one-pan dinner series. Her recipes are crafted with the intention of being quick, easy and delicious, and this latest installment is no exception.

Creamy Lemon Zucchini Pasta

This is, by Austin’s own admission, “an absolute go-to,” she said in the latest installation of her one pan dinner series. “It’s simple with minimal ingredients, with an easy one-pan clean up! Feel free to add shredded chicken or a protein of your choice to this as well!”

The ingredients

  • 2 large zucchini, sliced

  • 2 tbsp. butter

  • 1/2 yellow onion, diced

  • 1 c. orzo

  • 2 c. chicken broth

  • 1/2 c. parmesan

  • Lemon juice

  • Salt and pepper

  • Garlic powder

The steps

  1. Melt a tablespoon of butter in a pan and throw the thinly sliced zucchini in. Season with salt, pepper and garlic to taste. Cook until soft.

  2. Remove the zucchini, add another tablespoon of butter and the diced onion. Sauté for a couple minutes until soft.

  3. Add the orzo and chicken stock. Cover with a lid and simmer until “almost cooked through.”

  4. Add the zucchini back to the pan along with fresh lemon juice. Finish with the parmesan and more garlic powder and continue cooking until the orzo is tender.
