Healthy And Delicious: Summer Fruit Tarts

We all love to eat desserts throughout the year but when it’s hot it’s nice to have some lighter options. These summer fruit tarts are great for after a barbecue, a Sunday lunch or an evening with friends.

For The Apple Tarts:

(Makes 6)

For The Pastry

  • 100g of Plain Flour

  • 50g of Unsalted Butter

  • A Pinch of Salt

  • A Splash of Water

For The Filling

  • Three Sliced Apples

  • 100g of Caster Sugar

  • 50g of Unsalted Butter

  • 20g of Plain Flour

  • A Splash of water

Method

  1. For the pastry, rub the butter and flour together until the mixture resembles fine breadcrumbs. Then add the salt and enough water until combined. Refrigerate whilst making the filling.

  2. In a small saucepan, melt the butter and mix in the flour. Add enough water so the mixture is covered and pour in the sugar. Leave it to cook for around five minutes or until it resembles a thick sauce.

  3. Roll out the pastry and transfer into six mini tart tins.

  4. Place two tablespoons of the caramel mixture into the bottom of the tarts and arrange the apple slices in a flour shape on the top.

  5. Bake at 180° for around half an hour or until golden brown.

For The Cherry Tarts:

(Makes 6)

For The Pastry

  • 100g of Plain Flour

  • 50g of Unsalted Butter

  • A Pinch of Salt

  • A Splash of Water

For The Filling

  • 100g of Pitted Cherries

  • 50g of Caster Sugar

  • A Splash of Water

  • Fresh Cherries (For Decorating)

  • Icing Sugar (For Decorating)

Method

  1. For the pastry, rub the butter and flour together until the mixture resembles fine breadcrumbs. Then add the salt and enough water until combined. Refrigerate whilst making the filling.

  2. For the filling, boil and then simmer the unpitted cherries, caster sugar and water in a small saucepan until the mixture resembles jam.

  3. Roll out the pastry and transfer into six mini tart tins.

  4. Place two tablespoons of the jam mixture into the bottom of the tarts, making sure it is even.

  5. Bake at 180° for around half an hour or until golden brown.

  6. To decorate, place a fresh cherry on the top and add a dusting of icing sugar
