Spinach and peppadew muffins

Ingredients
80g spinach
2 eggs
20g peppadew peppers, diced
10g chia seeds
15g powdered stevia
250g oat flour
2 tsp vanilla extract
1 tbsp coconut oil, melted
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
Method
Mix the spinach, eggs, coconut oil, and vanilla extract in a blender until smooth. Combine the rest of the ingredients in a bowl, then mix in the spinach and egg paste.
Fill your cake cases and pop in the oven for 15 mins. Voilà.
