Spinach and peppadew muffins

Ingredients

  • 80g spinach

  • 2 eggs

  • 20g peppadew peppers, diced

  • 10g chia seeds

  • 15g powdered stevia

  • 250g oat flour

  • 2 tsp vanilla extract

  • 1 tbsp coconut oil, melted

  • 2 tsp baking powder

  • 1 tsp baking soda

  • 1/2 tsp salt

Method

  1. Mix the spinach, eggs, coconut oil, and vanilla extract in a blender until smooth. Combine the rest of the ingredients in a bowl, then mix in the spinach and egg paste.

  2. Fill your cake cases and pop in the oven for 15 mins. Voilà.
