Ingredients
160g sunflower seeds
100g pumpkin seeds
90g chia seeds
75g sesame seeds
60g whole flaxseeds (linseeds)
1 tsp za’atar spice mix
2 tsp flaky sea salt
Method
Step 1
Preheat the oven to 210C/190C fan/gas mark 6½. Line 2 large baking trays with non-stick baking parchment.
Step 2
Combine all the seeds (160g sunflower seeds, 100g pumpkin seeds, 90g chia seeds, 75g sesame seeds and 60g whole flaxseeds) and the 1 tsp za’atar spice mix in a large bowl, with the 2 tsp flaky sea salt and 400ml of warm water, then mix well. Leave to sit for 15 minutes, mixing every 5 minutes until the seeds soak up the water and the mixture becomes thick and gloopy.
Step 3
Spread the soaked seed mixture on to each lined baking tray, about 0.5cm thick. Bake in the oven for 45-60 minutes, until golden brown and crisp all over.
Step 4
Remove from the oven and allow to cool completely on the trays. Break into pieces and store the crackers in an airtight container for up to 7 days. They’re perfect for dunking and dipping.
