This Simple Mashed Potatoes Hack Will Give You The Creamiest Mash Ever

Has there ever been anything more comforting than a giant pile of mashed potatoes? A massive bowl of creamy mashed potatoes can melt all your troubles away. Seriously, how the hell does the humble spud do it?

Everyone has a different way of making mashed potatoes, and most of us start by simply boiling potatoes in water right?

Well, according to chef Tyler Florence, we should in fact start by cooking them in cream.

Thanks to Buzzfeed, who unearthed a Pop Sugar article from 2017, we now have the mashed potatoes hack to end all mashed potatoes hacks.

Tyler says he cooks his potatoes in the cream that you’d probably add at the end anyway. This makes sure you lose as little flavour as possible during cooking.

He explained, “Potatoes have a really delicate, beautiful minerality to their flavour profile, and when you cook potatoes in water and you pour that water down the drain, you've extracted all the flavour of the potato. So what I do with mashed potatoes — because you finish them with cream and butter anyway, right? — is I'll take that same cream and butter and add that to the potatoes and cook the potatoes in cream and butter.”

The way Tyler does it, is he adds “cold, peeled, chopped potatoes, cream, butter, and olive oil” to a pan. He also said, “I like garlic. I like sage and rosemary flavour combinations, and a little bit of thyme.” So, he adds those bad boys in too.

“When the potatoes are tender, I put a bowl on the counter and a colander inside that bowl. I pour the potatoes through the colander, and the cream will collect on the bottom, “Tyler explained. “Then I'll put the potatoes back into the pot and take the potato-infused garlic cream and fold that back into the potatoes, and it's the most incredible flavour profile. It's the best mashed potato you'll ever taste in your entire life.”

See ya – I’m off to buy a million potatoes, a vat of butter, an even bigger vat of cream, and thousands of pounds worth of herbs, because all I want to eat until the end of time are Tyler Florence’s mashed potatoes.
