5 Cheap, Quick & Easy Spring Recipes

Better weather and lighter nights mean healthy eating in our household! Here are some super easy and delicious recipes to try out for breakfast, lunch and dinner over the coming months.

Some of them take less than 10 minutes to whip up, and if you want to enjoy these at lunchtime, you can easily do all the prep the night before.

This Zingy Chicken and Pearl Barley Salad recipe serves two people, and is full of flavour and colour. 

The chilli, lime, garlic & ginger combination on the chicken works nicely with the slightly sweet salad dressing. Full of spinach and soya beans, it’s a great supper for the lighter nights. 

This delicious recipe of Sticky Tuna with Rice Noodles, Stir Fry Vegetables & Avocado makes for a really quick and easy lunch. It’s so simple - you can make this healthy bowl of goodness in under 10 minutes. Prepare it the night before and enjoy it cold at your desk.

Seafood Laksa is a really colourful and easy mid-week supper. Using seafood, as opposed to chicken or pork, makes this dish really quick to make, and my recipe makes enough for about 3-4 people, so you can enjoy it two nights in a row or for lunch the following day. Read the full recipe here.

An easy Mexican feast you can make at home. Homemade Shrimp Pitta Pockets, stuffed with a punchy salsa and topped with a little melted cheese. Absolutely delicious.
