Creamy Roasted Garlic Parmesan Chive Mashed Potatoes
12 to 16 cloves of garlic
2 tbsp. olive oil
7 to 8 medium to large Idaho potatoes
1/3 c. sour cream
4 tbsp. butter
1/2 tsp. pepper
1/2 tbsp. salt
2/3 c. Parmesan cheese
1/4 c. half and half
1/4 c. chives
Place the garlic and olive oil in a cast iron skillet (or another oven-safe dish) and cover with aluminum foil. Bake at 375 degrees for 35 minutes.
Peel and wash the potatoes. Chop into round quarters.
Fill a large pot with water and place the chopped potatoes in the water.
Bring to a boil and cook for about 17 minutes or until soft.
Drain the water in a colander, then return the potatoes to the pot.
Mix in the baked garlic, sour cream, butter, pepper, salt, cheese, half and half, and chives. Reserve some chives for topping.
Using a potato masher, mash all of the ingredients together until you’ve achieved your desired consistency.
On top, add more butter, olive oil and chives, to taste.
