We’ve had a real craving for lemon drizzle cake recently. Not sure why. Maybe it’s since we saw this hack for squeezing lemons? Yeah, actually, since then, all we’ve fancied is lemon drizzle cake washed down with freshly-made lemonade. We’re so easily swayed by the internet…
We love lemon drizzle cake just about as much as we love our trusty slow cookers, so surely a slow cooker lemon drizzle cake recipe would be the dream? Well, we’re in luck, because we’ve discovered that a number of people have been making lemon drizzle cakes in their slow cookers, and they’re here to show us how.
This recipe, which we found on the Slow Cooker Recipe & Tips Facebook page, only has six ingredients, which makes it so easy to make.
Slow cooker lemon drizzle cake ingredients
- 120g self-raising flour
- 200g caster sugar
- 120g butter
- 2 medium/large eggs
- 1 tbsp milk
- 2 drops vanilla essence
- 1 lemon
You basically mix the flour, 120g of the sugar, the butter, the eggs, the milk and the vanilla together, and place in a lined loaf tin in your slow cooker, then cook on high for three hours. Then when it’s cooked, poke holes in the top of the cake. Mix the remaining sugar and lemon juice together and pour it over the cake. You can even sprinkle a little lemon zest over to give it a fancy-pants finish.
