'Mighty' roast potatoes recipe leaves foodies wanting to 'devour' them
Roast potatoes, while simple to prepare, can be a standout feature of your Christmas dinner, and most of us like them to be extra crispy.
Potatoes may be one of the easiest things to cook, but without the right recipe, they can be somewhat bland. So, to wow your guests, try this flavour-packed recipe for the perfect festive roasties.
A viral recipe by chef Sam Seats left food enthusiasts salivating, amassing over 18 million views. The internet sensation, with an impressive 9.9 million TikTok followers and 2.81 million YouTube subscribers, promises his "mighty roast potatoes" will "help you make the best tasting Christmas meal you've ever had".

Best of all, the recipe is budget-friendly and can serve six to eight people. Follow Sam's simple steps to create these irresistible roast potatoes in your own kitchen:
Ingredients
2kg King Edward potatoes, peeled and cut into chunks
A few garlic cloves that have been peeled and crushed
500g of goose, duck, or beef fat
A few sprigs of rosemary (optional)
Zest of one lemon
A big sprinkle of sea salt
Method
Begin by placing the potato chunks in a pot along with a pinch of salt and the crushed garlic cloves. You can also add some rosemary sprigs if you wish
Cover the ingredients with water and bring the pot to a boil
Allow the potatoes to cook for about 10 minutes until they are tender enough to pierce with a fork, but don't let them get crumbly
While the potatoes are boiling, preheat your oven to 200C/390F fan
Once boiled, drain the potatoes and let them sit in the colander for a few minutes to steam dry
Next, return the potatoes to the empty pot, cover it with a lid, and give them a good shake. This will lightly 'fluff' the potatoes, which is the key to getting those crispy edges
Divide the goose fat between two baking trays. Place the trays in the oven to allow the fat to heat up for about 15 minutes
Take the trays out of the oven and carefully add the potatoes - they'll need to cook for 60-75 minutes
Every 20 minutes, take the potatoes out the oven and make sure they're well-coated in hot goose fat before putting them back in
While the potatoes are cooked, make rosemary salt by blending or finely chopping the rosemary, lemon zest, and salt together
The potatoes are ready once they're golden brown - remove them from the tray with a slotted spoon, place in a big bowl and toss them together with the rosemary salt, plus some chopped rosemary
