Melissa Wood-Tepperberg’s Loaded Avocado Toast Is Making Our Mouths Water

Workout and wellness leader Melissa Wood-Tepperberg knows that a hearty and healthy breakfast is the best way to start the day, and the 2023 SI Swimsuit Issue rookie does not gatekeep when it comes to recipes.

Earlier this week, the certified yoga and Pilates instructor walked her TikTok followers through how she prepares her go-to loaded avocado toast, a breakfast packed with protein and healthy fats.

“🥑 Quick, easy, and delicious!” she noted of the meal in her caption. “Try this loaded avo toast recipe for the ultimate morning boost. Perfect for busy mornings when you need a healthy and filling breakfast in a flash!”

Melissa Wood Tepperberg’s Loaded Avocado Toast

Ingredients: 

  • One Ezekiel 4:9 Sprouted Grain English muffin

  • Monty’s plant-based butter

  • Sliced avocado, tomato and white onion

  • Sea salt

  • Two eggs

  • Everything bagel seasoning

Instructions:

  1. Toast English muffin and spread with butter.

  2. Top each half with smashed avocado, then top with sliced tomato and onion.

  3. Sprinkle with sea salt.

  4. Prepare your eggs over-easy on a skillet, then add to each English muffin top.

  5. Sprinkle both halves with everything bagel seasoning and enjoy!
