While many of us have spent the past 18 months brushing up on our cooking skills (we've got baking banana bread down to a fine art), if you're looking to further polish your culinary talent ahead of this year's festive period, book yourself onto one of Season's upcoming Christmas food courses.
Surrounded by 63 acres of countryside, ten minutes from the historic city of Winchester, Season Cookery School sits in the grounds of 17th-century luxury hotel Lainston House. From the hotel group Exclusive Collection (which boasts Penny Hill Park, the training home of the England rugby team in Bagshot, Surrey, and the Royal Berkshire in Ascot in its stable), Season offers state-of-the-art kitchen facilities, a dedicated modern dining space for post-lesson feasting and a kitchen garden complete with pizza oven.
Classes at Season are run by a series of incredible chefs and local producers. Many of the courses here are led by Exclusive Collection's own chefs, including Lewis Hamblet, Executive Chef of Camellia at South Lodge, who trained at the Savoy Hotel in London; Phil Yeomans, Executive Chef at Lainston House, formerly of The Dorchester, Harvey Nichols and Soho House; and Sarah Frankland, Head Pastry Chef at Pennyhill Park, who was recently a finalist in 2019's Bake Off: The Professionals.
Season's half-day and full-day cookery classes span a broad range of topics and cuisines – you can master making a hollandaise and a classic French jus in a four-hour sauce workshop, or learn to craft crab spring rolls and authentic green curry in a six-hour Thai street food session. But if it's your Christmas menu that you've got front of mind (there are less than 100 days to go, after all!), there’s a selection of festive classes that can help you prepare:
The Christmas Entertainer: Tapas Style (Sunday 21st November)
Learn to make delicious light bites and canapés, perfect for a yule tide drinks party.
Christmas Pudding and all the trimmings (Friday 26th November)
Get to grips with the traditional dessert, plus accompaniments such as rum custard and brandy butter.
The Main Event (Saturday 4th December)
Learn the secrets to making the best-ever Christmas dinner – including roast turkey, all the trimmings and figgy pudding – so it's a total breeze on the big day.
Edible Gifts for Christmas (Sunday 5th December)
Bake and create delectable food gifts for loved ones, such as chocolate truffles, stollen and biscotti.
Twixmas Meals (Saturday 18th December)
Know exactly what to do with your leftovers in the lead up to New Year and enjoy preparing dishes such as turkey, cranberry and brie tortilla, and sumptuous Christmas pudding cheesecake.
Very excitingly, we’re giving our readers the chance to win a full-day cookery course at Season for two people, plus a one-night stay and dinner at Lainston House. The competition closes at 11.59pm on 30th September 2021. Best of luck!
