Last minute gift idea: Homemade millionaire’s shortbread

As Christmas is coming closer, plenty of us still have lots of gift shopping still to do and no time at all to do it!

Many of my favourite gifts to give are edible as they are guaranteed to bring joy and happiness. These millionaire’s shortbread squares are easy to make, look effective and can be made in one evening.

Put on the Christmas tunes, pour some mulled wine and get baking!

Ingredients:

For the shortbread:

250g of Plain Flour

50g of Caster Sugar

170g of Unsalted Butter

For the caramel:

300g of Condensed Milk

150g of Unsalted Butter

50g of Caster Sugar

4 tbsps of Golden Syrup

For the chocolate:

150g of Dark Chocolate

50g of White Chocolate

To make:

Make the shortbread by combining the flour, sugar and butter in a bowl and rubbing the mixture together with your fingers until it resembles breadcrumbs.

Line and grease a deep-edged tin with baking parchment and pour in the shortbread mixture. Press it firmly down until it’s flat and even.

Bake at 180⁰ for about 20 minutes or until golden brown.

Whilst the shortbread is baking, put the condensed milk, butter, sugar and golden syrup in a saucepan and gently heat until the butter has melted. Then, increase the heat a little and cook for another 5 minutes, continuously stirring.

Pour the caramel over the cooked shortbread and leave to cool until it’s set.

Once the caramel is firm to touch, melt the dark chocolate and pour over the caramel. Leave for around 20 minutes.

Melt the white chocolate and using the end of a spoon, flick it over the dark chocolate to create a striped effect.

Leave to cool overnight or in the fridge. Once completely set, the shortbread can be cut into squares, wrapped in cellophane and tied with a ribbon to be given as gifts.
