The Key To The Perfect Fried Egg Is A Special Kind Of Butter, According To This Chef

How to fry an egg may seem easy and obvious. But, it turns out there are a few things you can do to make fried eggs even more delicious. And who wouldn’t want their fried eggs to be even more delicious, right?

According to chef Yasmeen AlSawwaf, the key to making perfect fried eggs is just changing up a couple of things.

Speaking to Eat This, Not That, Yasmeen explained that a non-stick pan is essential for perfect fried eggs.

She also suggested frying your eggs in clarified butter (butter from which all milk solids have been removed. Removing these gives you a clear yellow fat that can be heated to a higher temperature than regular butter). Not only does the clarified butter allow you to fry the egg without it sticking to your pan, it also “adds a lovely flavour”.

And temperature is key for frying eggs too. Yasmeen said you should be aiming for a “high heat”; between 255°F to 280°F - or 123°C to 137°C. She added: “Having high heat means that the eggs could brown and blister before being properly cooked in the centre. Fried eggs should be shiny and have fully set whites and shouldn't be blistered or browned, while the yolks should be properly cooked according to your preference.”

And this seems obvious, but another of the chef's tips is using fresh eggs.

Yasmeen said: “Fresh eggs are essential for perfectly fried eggs. When an egg ages, the whites and yolk thin out. This means that the white will spread instead of being compact and thick and the yolk won't sit atop the whites perfectly.”
