There might be no duo we trust more for a good game day recipe than fitness instructor Katie Austin and chef Carissa Stanton. Both are well known for their ability to craft easy and delicious recipes for everyday life. And, now, they have teamed up to do just that, Super Bowl-style.
The pair got together and crafted a game day-ready recipe that they’ve named Cowgirl Dip. The “cheesy Southwest inspired dip” could not be more perfect for your Super Bowl spread, which tends to be composed of a handful of heavenly appetizers.
The best part about the recipe is its ease. In characteristic form, the pair created a dip that takes just five minutes to prep and only a few minutes to cook. If you’re looking for something to bring to Sunday’s festivities, you can’t go wrong with Cowgirl Dip.
8 oz. cream cheese (at room temperature)
1/2 c. Greek yogurt or sour cream
16 oz. jar chunky red salsa
4 oz. can diced green chiles
2 tbsp. taco seasoning
3 c. frozen fire roasted corn
1 can black beans drained and rinsed
1 1/2 c. Monterey Jack cheese
Green onions chopped (for topping)
Combine all ingredients, except for one cup of cheese, in a mixing bowl.
Pour mixture into an oven-safe dish and sprinkle the remaining cheese on top.
When ready to serve, bake for 20 minutes at 400 degrees Fahrenheit.
Top with green onions and serve with tortilla chips.
