Heston Blumenthal has been working with Waitrose for a few years now and his contributions to the Christmas ranges are eagerly anticipated. The 2020 Christmas line-up was recently released and this Christmas pudding with a twist immediately caught our eye.
The Sherry and Balsamic Vinegar Christmas pudding is unexpected but sounds surprisingly delicious. The supermarket says the aged balsamic of Modena works with the ruby port to bring out the fruity flavours of the plump Turkish sultanas that have been soaked in the two.
Fresh apple, cider and dark, intense Pedro Ximénez sherry all add to the taste, and the pudding is then matured for a full 12 months to let them all blossom.
While vinegar may not be the first flavour that comes to mind for a Christmas pudding, this sounds mouthwatering.
And if there are certain family members that can't be persuaded to finish off their Christmas feast with this particular boozy pud, Heston has also created a Sherry Trifle Panettone and a rum soaked Tipsy Stollen with fudge.
Heston from Waitrose Sherry and Balsamic Vinegar Christmas pudding costs £14 and serves 8 people. It will be available in the coming months.
